Spaghetti alle Vongole

This popular spaghetti dish can be prepared one of two ways – either in bianco – white wine, garlic, EVOO, and parsley, or – in rosso — with tomatoes and fresh basil. The clams are cooked quickly in hot oil with plenty of garlic, where they naturally open and release their exquisite flavor. Buon appetito!
