Puntarelle

Puntarelle is a type of cultivated chicory grown in the Lazio region of Italy, which has a delicious mildly bitter taste. It is usually prepared by being cut into thin julienne strips, soaked in ice water which causes it to curl, and then served with an anchovy vinaigrette. One of my absolute favorite things to eat in Rome! Buon appetito!
