Pici all’aglione is perhaps the most popular pasta dish in Siena and surrounding area. While pici (hand-rolled, thick spaghetti-like pasta) can be served with everything from ragù to porcini mushrooms to breadcrumbs to cacio e pepe, “all’aglione” is the most common recipe.
