Peperone Crusco (“crispy pepper”) is a delicious typical product of the Basilicata region of Italy. They are made by sun drying Senise red peppers in the summer months. The peppers are usually strung together to form garlands known as “serte,” and dried just about anywhere – balconies, windows, porticoes. Although often used to garnish various dishes, peperoni cruschi can also be consumed on their own as a side dish. Buon appetito!
