Pappa al Pomodoro
Old bread need not go to waste! Tuscan country bread soup, or “Pappa al Pomodoro” is a very tasty dish that calls for the simplest of ingredients: canned or fresh tomatoes, garlic, olive oil, basil, and leftover bread (a more authentic version of this soup will use traditional Tuscan bread without salt, but ciabatta or any other thick, crusty white bread will do). This rustic dish is a classic Tuscan recipe and can be found in just about any restaurant in Florence.
