Minestrone alla Genovese is typical of the northwestern Italian coastal city of Genoa. It is prepared in a similar fashion to traditional Italian vegetable soup (“minestrone”) but includes a generous dose of pesto just before it’s served, which gives the minestrone its signature green color and tangy flavor.
