Lampredotto

If you visit Florence, then you need to try one of the city’s most famous specialties – lampredotto. Made from the fourth and final stomach of a cow (known as the “abomasum”), lampredotto is slow cooked in an herbal broth to tenderize and season it. It is usually served as a “Panino” (“sandwich”) with a traditional green sauce and is readily available in any number of sandwich stands throughout the city. Renaissance street food!
