Bigoli in Salsa

Typical of the Veneto region, bigoli are a type of fresh or dry pasta that appear like thicker spaghetti. They were originally made with buckwheat flour and duck eggs. The “salsa” refers to a very simple onion and anchovy sauce that is as simple to prepare as it is BUONO DA MANGIARE! Serve with a nice chilled white wine from the Veneto region. Buon appetito!
