Ragù is a meat sauce that is typically served with pasta. In northern Italy, the sauce usually includes one or more types of meat (usually beef and pork) and is cooked slowly for a very long time with sauteed celery, onions and carrots and the addition of wine and aromatic herbs like basil and bay leaf. Ragù sauce is most often enjoyed over a plate of tagliatelle pasta, but feel free to use your pasta of choice.
