Ricotta literally means “recooked” and is a type of cheese made from the left-over production of other cheeses. It can be made from sheep, cow, goat or water buffalo milk whey heated to a near boil, then passing the cooled liquid through a fine cloth to collect the curd. Ricotta curd is creamy white in appearance and has a slightly sweet taste. In fact, one of my favorite snacks as a child was fresh ricotta cheese with sugar. Buon appetito!
