This unique type of bread from the northern Italian city of Ferrara was first made in the 13thcentury. It is made with flour, lard, malt, and EVOO and is then twisted into a “spider” shape allegedly inspired by the long curly hair of Lucrezia Borgia who married the Duke of Ferrara in 1501. In fact, it is also sometimes called “Coppia Ferrarese,” from the Italian word for “pair” or “couple”, alluding to the two pieces of dough that are twisted together and pinched at their midpoint.
