One of Trattoria Cammillo’s signature dishes, all you need is fresh, tender, thinly sliced artichokes, high-quality fresh whisked eggs, and EVOO. Suaté the artichokes first, then add egg, and cook until the whole thing starts to become firm (remember, it will continue to cook for a bit afterwards, so don’t overdo it!)
