Finocchiona

Finocchiona is a variety of Tuscan salami that is characterized by its use of crushed wild fennel seeds (“finocchio” is the Italian word for “Fennel”) which are common throughout the region. Finocchiona originated in the late Middle Ages when fennel seed was used as an alternative to pepper, a much more expensive spice. Buon appetito!
