Fave and Pecorino (Fava beans and Sheep’s milk cheese)
You know summer is around the corner in Italy when this dish shows up as an antipasto on restaurant menus. Fresh, uncooked fava beans (called “baccelli” in Tuscany) served with pecorino cheese. The bitterness of the beans is offset by the saltiness of the cheese. Serve with a nice chilled white Italian wine. Buon appetito!
