Literally translated as “beans in the bird manner,” this side dish (“contorno”) has its roots in the “peasant” Tuscan culinary tradition. After soaking your cannellini beans, cook for 15 minutes in tomato puree prepared with garlic, EVOO, salt, pepper and either sage or rosemary. For an extra kick, drop some Tuscan sausage in as well.
