Abbacchio al Scottadito (grilled or roasted lamb chops)

One of my favorite things to eat when I am in Rome, this dish could not be any more simple or delicious. “Abbacchio” is the Roman word for “suckling lamb,” while “scottadito” means “burnt fingers,” as this Roman specialty is meant to be eaten with your hands. All you need is high quality lamb chops, EVOO, garlic, salt and rosemary and then cook quickly on a hot grill or in oven. Buon appetito!
