Zucca e patate vellutate (Cream of Pumpkin and Potato Soup) is the perfect way to warm up a brisk fall day. Simply sauté pumpkin and potato cubes with a diced onion in EVOO and gradually cover with vegetable broth. Salt and pepper to taste and then puree. Serve with croutons. Buon appetito!
