Vignarola

Last week, I was sitting in one of my favorite restaurants in Rome and couldn’t decide between artichokes or fresh peas as an antipasto. The waiter said, “Prendi la Vignarola, no?” And I said, “Hai ragione!” You know it’s spring in Rome when you find this dish on the menu. Not only do you get artichokes and fresh peas, but fava beans as well. All cooked with pancetta (optional) and sauteed onions. Mamma mia che buono. Buon appetito!
