Verdure alla Giardiniera (Italian Pickled Vegetables)

Wondering what to do with all those vegetables in your garden? No way to eat them all now and not enough people in the world to give them away to. So, do as the Italians do – pickle them. Simple as can be, “Verdure alla Giardiniera” is simply jarred fresh vegetables covered in salt brine. There are many different recipes for the brine, so find the one that works best for you. Enjoy in your salad, as an antipasto, or as a “contorno” (“side dish”). Buon appetito!
