Uova al Tartufo (“Fried eggs with White Truffle”) – My absolute favorite way to enjoy white truffles could not be any easier to prepare. Fry as many eggs as you can eat sunny side up in olive oil, then salt to taste and shave on as much white truffle as you can afford! I like to eat the egg white first, and gradually make my way to the truffle- covered oozy yolk which I place on a thinly sliced piece of toasted Tuscan bread and then I put it all into my mouth at once – MAMMA MIA! An explosion of tastes and textures and aromas. There are few things in this world that I enjoy more. Buon appetito!
