Typical of both Liguria and Tuscany, Totani in Zimino is a simple and delicious recipe. Sauté squid in EVOO, garlic and chili pepper, then add red wine and some tomato paste or thick tomato puree. After the wine evaporates, add previously blanched and chopped Swiss chard or spinach. Cook a few minutes longer and serve over toasted bread. Buon appetito!
