Torta Coi Bischeri (Rice and chocolate tart)

Torta coi Bischeri (also known as “Pilgrim Cake”) is a classic holiday dessert in the Pisa area dating back to the 16th century when pilgrims to San Giuliano Terme would prepare it. Its name translates as “Cake with tuning pegs” – i.e., on a violin – but “bischero” also refers to a foolish person (long story). The cake is more like a tart and is made with shortcrust pastry filled with white rice, dark chocolate, pine nuts, candied fruits, raisins, and spices. Buon appetito!
