Spaghetti ai Ricci di Mare (Spaghetti with Sea Urchin)

It’s hard to believe something so easy to make can be so good. Simply sauté garlic in EVOO and eventually add some of the pasta water. Finish cooking pasta in the pan with EVOO and garlic by gradually adding water, and then add half of your sea urchin – either fresh or jarred pulp – and mix.  Garnish each plate with the remaining sea urchin. Buon appetito!
