Sfincione Palermitano

Sfincione palermitano is a thick, spongy Sicilian pizza-like street food from Palermo, similar to a focaccia. It is characterized by its soft dough and a savory topping that typically includes a tomato-based sauce with onions and anchovies, finished with breadcrumbs and a tangy cheese like caciocavallo. Sfincione appropriately takes its name from the Latin “spongia” or “sponge.” Buona appetito!
