Sarde a beccafico (stuffed sardines)

Named after a prized species of bird once consumed by Sicilian aristocracy – “beccafico” – which they resemble, sarde a beccafico are butterflied rolled sardines stuffed with a mix of breadcrumbs, pine nuts, raisins and herbs. The rolls are then baked between bay leaves and/or orange slices. Buon appetito!
