A typical Venetian dish, Risi and Bisi (“Rice and Peas”) is a simple recipe fit for a king – or rather, a doge! In fact, on April 25th , the feast day of Venice’s patron saint, St. Mark, the doge was served Risi e Bisi. All you need Viaolone Nano rice (a type of rice typical of the area around Verona), fresh peas, pancetta, butter, vegetable broth and Grana Padano cheese. Buon appetito!
