Porchetta
There are few things in life that I like better than the crunchy, salty crust of porchetta! Especially with a nice glass of red wine. Porchetta is essentially a pork roast made from a heavily-salted, slow-roasted deboned pig – skin and all – stuffed with any number of spices including wild fennel. Popular in all of Italy, the area most associated with the dish is a town near Rome called Ariccia and another in Umbria called Norcia. Don’t bother trying to prepare it, just get yourselves to Italy and eat as much as humanly possible!  Buon appetito!
