While many believe “Pinsa” is simply what the Romans call “pizza,” in reality it is quite different both in its ingredients and its preparation. Pinsa is made with a blend of flours including wheat flour, rice flour, soy flour and dried mother yeast. It also has a long fermentation process and high hydration/low yeast dough which increases its digestibility. Pinsa is also stretched into an oval shape instead of circular or rectangular.
