According to Florentine legend, although this dish was not invented by Brunelleschi, he greatly enhanced it. While walking past the kilns used to produce the bricks for his great dome one day, Brunelleschi noticed that the kinsmen were also cooking a beef stew in their ovens. After tasting their stew, he asked the kilnsmen to meet him there again the next day. When they did, Brunelleschi added a variety of herbs to the stew which greatly enhanced its flavor which earned him the honor of having the dish named after him. Buon appetito!
