One of Italy’s most iconic dishes, Parmigiana alle Melanzane (Eggplant Parmigiana) is also one of its most delicious. Simply layer slices of fried eggplant, tomato sauce, grated Parmigiano Reggiano cheese (NOT PARMESAN!), slices of mozzarella cheese, and fresh basil and then bake at 400F for 30 minutes.
