This is a classic Puglian dish that is as simple to make as it is good. While you are cooking your store-bought orecchiette pasta (if you want to learn how to make the fresh kind, join me on my Puglia Travel Program), fry some garlic, dried chili peppers, and anchovies in olive oil. Steam some broccoli rabe or cook directly with the pasta. When orecchiette are ready, strain and mix with everything else. Serve with more olive oil (preferably from Puglia) and pecorino cheese.
