Iris pastries are a traditional specialty from Palermo, Sicily and were invented by local pastry chef Antonino Lo Verso in honor of the premiere of Pietro Mascagni’s opera “Iris” at the Teatro Massimo in Palermo in 1901. They are made of soft, sweet brioche dough filled with sheep’s milk ricotta cheese and chocolate chips, then breaded and deep fried. Buon appetito!
