Fettuccine Alfredo

According to tradition, this recipe was invented by Alfredo Di Lelio in Rome in 1907 – hence the name. Consisting of only three ingredients – fettucine pasta, unaged Parmigiano Reggiano cheese, and lots of butter, this dish is as delicious as it is simple. If you are in Rome, try it at Alfredo alla Scrofa Restaurant, which was opened by Alfredo Di Lelio in 1914! Buon appetito!
