Culurgiones are a traditional hand braided stuffed pasta typical of the Blue Zone region of Ogliastra in Sardinia. Their shape is meant to resemble a wheat ear, and they are filled with a stuffing consisting of Pecorino Sardo cheese (Sardinian sheep’s milk), potatoes, and mint.
