Collo Ripieno (Stuffed Chicken Neck)

Stuff a deboned chicken or turkey neck with a stuffing made of ground beef and pork, egg, Parmigiano Reggiano cheese, chopped parsley, nutmeg, salt, pepper, and breadcrumbs. Sew the ends of the stuffed chicken neck closed, and then sauté in EVOO and white wine for about 30 minutes. Buon appetito!
