Carciofi Sott'Olio (Artichokes in Oil)

As we gear up for artichoke season in Italy, one of the best ways to enjoy them all year round is to preserve – or “pickle” – them in oil. The simple and delicious process involves cooking the cleaned artichokes in water and vinegar, drying and seasoning them, then placing them in a jar and covering them in oil. Cook for 2/3 minutes from the moment of boiling. Buon appetito!
