Cappelletti in Brodo Al Tartufo Bianco
Similar to tortellini, cappelletti pasta is typical of the Marches region and filled with a mixture of pork, chicken, prosciutto and Parmigiano Reggiano cheese. One of my favorite ways to enjoy them is cooked in beef/chicken broth, then served with grated Parmigiano Reggiano cheese and abundant white truffle shavings. Buon appetito!
