On My Table: “Baccalà alla Vicentina”
The signature dish of Vicenza (a town just outside of Venice, Italy), “Baccalà alla Vicentina” is prepared with stockfish (air-dried cod, or “stoccafisso”), onions, olive oil, anchovies, milk, cheese (often Parmesan), and parsley, traditionally served over a bed of polenta. Buon appetito!
