Arista di Cinta Senese (Sienese Saddleback Pork Loin)

Like every other product derived from the Cinta Senese pig, arista is absolutely delicious. While there are many different ways to prepare arista, the most traditional – and my personal favorite – way to prepare it is by roasting with a simple olive oil, rosemary, sage, salt, pepper, garlic, and white wine preparation.
