What better way to celebrate Easter than with this old-fashioned dish. All you need is high-quality lamb meat, savory tomatoes, red wine, and the usual suspects – onions, celery, garlic, thyme, rosemary, black pepper, broth, carrots, capers, bay leaves – and a lot of patience, as it all cooks very slowly over low heat. But mamma mia, is it worth it. Buon appetito!
